Vinification Method / Maturation

Cryo-extraction and alcoholic fermentation at graded temperatures (22-25°C). The wine stays for 12 months on the fine lees and then matures for 12 months in the bottle before commercial release. It is not filtered and undergoes absolutely no treatment before bottling.

Tasting Characteristics

Deep red color, full of intensity and liveliness. On the nose, aromas of ripe red fruits unfold like plum and cherries, framed by sweet spices and subtle hints of vanilla. In the mouth, the Xinomavro gives its characteristic acidity and structure, while the Syrah adds a smoky rich aroma and spicy flavor.

Harmony

Goes perfectly with calf, wild boar, lamb, rich sauces, as well as with aged cheeses.

Vinification Method / Maturation

Destemming, no pressing, cold-extraction in a controlled environment at 6°C for 96h. Eighty percent of the wine is vinified at controlled temperatures with a long post-fermentation extraction of 40 days and 20% is vinified using the “Pigeage” method. The wine stays for 20 months on the fine lees and 12 months in a reducing environment inside the bottle before release. It is bottled after natural stabilization without filtration. Any amount of sediment is normal.

Tasting Characteristics

Deep purple-violet color anticipating the concentration and generosity that follows. The nose is rich with dense aromas of red and black fruits like juicy red cherry, black cherry, raspberry and blackcurrant. In the mouth it is velvety and full, with excellent balance between freshness and the aromatic fruity aftertaste. The tannins are soft and well-structured, giving a velvety texture, nice structure and long aftertaste.

Harmony

It fits perfectly with grilled meats, cooked red meats, game with mixed salads, spicy cheeses, lamb shank with saffron, traditional pastitsio and grilled sausages.

Vinification Method / Maturation

Vinification of each variety separately. Destemming, cold-extraction for 10-12h, alcoholic fermentation at controlled temperatures 15-17°C. The wine stays for 4 months on the fine lees (sur lie) with periodic stirring (method batonnage). The final blend results from the mixing of two different varieties.

Tasting Characteristics

Golden-yellow color, bergamot aromas, citrus, kumquat, lime, orange and bananas. In the mouth it has a medium body with intense acidity and moderate aromatic intensity. The cool and strong acidity of Assyrtiko balances perfectly with the delicate touches of vanilla, the velvety texture and the slightly buttery nuances of the Chardonnay.

Harmony

Goes well with fresh salads with light sauces, carpaccio of all kinds, smoked hams, smoked trout, spaghetti cacio e pepe and roasted vegetables.

Vinification Method / Maturation

Destemming, no crushing, skin contact under controlled conditions 15-17°C. Contact with the lees (sur lie) and periodic stirring of wine lees with the batonnage method for 4 months.

Tasting Characteristics

Lemon-green color with green highlights, stone fruit aromas with distinctive notes of nuts and unripe apricot. In the mouth, it has a medium body, medium acidity and pleasant texture.

Harmony

Fits perfectly with white meats, poultry, seafood, grilled fish, risotto and veal tonnato.

Tasting Characteristics

Medium lemon color, citrus fruit aromas like lemon and grapefruit, but also notes of unripe peaches or pineapple. In the mouth it has a medium to full body, high lively acidity. With aging, its mineral character is emphasized and it acquires notes of honey, jam and orange.

Harmony

Goes well with fatty fish, mussels, grilled shrimp, shellfish, sushi, lamb fricassee, chicken lemonato, chicken cuts with lemon sauces and ceviche.

Vinification Method / Maturation

Destemming, no pressing, cold-extraction in 8h at 6°C in a controlled environment, followed by static desilting, pressing and fermentation at controlled temperatures (14°C). The wine then stays for 6 months on the fine lees with periodic stirring (method batonnage).

Tasting Characteristics

Salmon color, rose scents and rose water framed by sweet Turkish delight notes and strawberry jam. In the mouth it is full and balanced, with moderate to high acidity and medium to high aromatic intensity, which gives freshness and duration, while the aftertaste remains aromatic and pleasantly persistent.

Harmony

Goes well with poultry, giouvetsi, seafood kritharoto, grilled sardines and lobster pasta.
